Welcome to my ranch.<o:p></o:p></span></p><p class="MsoNormal"><span lang="EN-US" style="font-size:11.0pt">Tijuana is a ruckus in its own right. We aren’t betterthan the rest of the country, but we are different. We got the blessing and thecurse of living just a few yards away from the United States, where peoplecross the border every day, legally and illegally, looking to make somedollars. We are inevitably influenced by the gringos. We didn’t grow up eating tamalitosin the morning or romeritos on Christmas; we were raised on McMuffins or eggand winie burritos with ketchup. We watched John Wayne and Clint Eastwoodbefore Pedro Infante and Tin Tan. We found out what was going on in the worldthanks to Fox News, BBC, CNN, MTV, Cartoon Network, and VH1. We never put up analtar on Día de Muertos. We celebrated Turkey Day in November and didn’t try moleuntil reaching adulthood.<o:p></o:p></span></p><p class="MsoNormal"><span lang="EN-US" style="font-size:11.0pt">This city was not part of the plan. To a certaindegree, it’s a forgotten metropolis, a no-man’s land that has it all. We havean ocean and a sea, forests, beaches, deserts, a Mediterranean climate, wine,beer, seafood, mollusks, meat, parties, norteñas, graffiti, border art,cocktails, vices, sins, violence, drugs, fear…but above all, we have eachother.<o:p></o:p></span></p><p class="MsoNormal"><span lang="EN-US" style="font-size:11.0pt">This is where you’ll find the most badass people inthe country. Because not just anyone has the balls and ovaries to leave theirland behind and figure out how to jump over the pond in search of a betterlife. Each one of those people is a story of migration and, consequently, ofadaptation. The book you have in your hands is full of those stories. BeingTijuanan means having something in you from Jalisco, San Luis Potosí, Veracruz,Sinaloa, Michoacán, Sonora, and Nayarit, and it also means being a bit Chinese,Russian, Japanese, Arab, gringo, and German. Just like the city, its cuisine ismigrant. Our now famous birria is the result of people from Guadalajara—tapatíos—arrivingand having to adapt in order to survive. There weren’t any goats or wildoregano, but there was a shitload of beef and Anaheim chiles. The same thinghappened with the Sonoran tacos de asada, the carnitas from Uruapan, and theSinaloa-style seafood tacos. Tacos were our salvation. They made us Mexican.<o:p></o:p></span></p><p class="MsoNormal"><span lang="EN-US" style="font-size:11.0pt">In Tijuana, the taco has come to stay. It’s inconstant evolution, precisely because this migration will never end. We won’tstop eating or learning, and that’s incredibly exciting to me. I’ll dare to saythat Tijuana has the best tacos in the country, and it’s because they’re madeby the hands of honest, respectful, and hard-working people who are nowTijuanan despite having come from all over. We are the country’s entryway, alittle taste of everything you can discover if you cross over into the universecalled Mexico.<o:p></o:p></span></p><p class="MsoNormal"><span lang="EN-US" style="font-size:11.0pt">Being part of Guía Domingo – Tacos Tijuana means agreat deal to me as a Tijuanan cook. I am grateful to Nico, Alberto, and Pedrofor inviting me to be part of this project that has let me fall even more inlove with my city. I understood why I insist on being here and why I get somuch enjoyment out of showing it to anyone who walks through the door. Welcometo Tijuana. The goddamn cure.
